Is there a list somewhere of which restaurants require ADR and which ones don't take them at all?

There are only a couple of places I can think of that require an ADR but there are many that you'll be hard pressed to get into without one. You must have a reservation at Victoria & Alberts, Citricos Chef's Domain, and dinner packages. I'm not 100% sure but I don't think you can walk-up at the dinner shows either.

I know Big River Grill doesn't take ADRs. I'm not sure about House of Blues and Bongo's.

Well, V&A is the only WDW restaurant that has a rule that you must have an ADR.

But, in a practical sense, it's very difficult to get into most WDW restaurants without an ADR. Many don't take walk-ups at all if they're fully booked, and most theme park restaurants and character meals are fully booked every day.
