Every ride accepts DAS. Look in the ap, select a time and go to lightning lane entrance, after ride select another choice. Never tried with meet and greets, we do a character meal for a less stressful way to meet characters up close.
We were directed to use exit like wheelchairs for the boat ride in Mexico. And I think one other Fantasyland ride. Also, you can ask to skip the stretching room in Haunted Mansion, if you think the packed in and strobe effects will be too overwhelming.
 
I think nearly all rides accept it, but other types of attractions don't. Examples include Robinson's Treehouse, Liberty Riverboat, Tom Sawyer's Island, Moana's Water World, Hall of Presidents, and American Adventure.

Important note: DAS alone does not work for rides with Virtual Queues (Tron, Guardians, Tiana's). You have to secure a virtual queue boarding number first. Then, when your boarding group is called, let the CM know you have DAS, and they will direct you to the LL entrance, which is shorter than the VQ line.
* Alternatively, you can purchase the Individual Lightning Lane for those rides if you want more control over your ride time.

Before the recent changes to DAS, guests who were approved for DAS were able to book 2 DAS Advance Selections per day 2-30 days before their first park day. The list you saw would have been the select list of attractions that were available to book in advance.
After the changes on May 20 at WDW and June 18 at DL , DAS Advance Selections are no longer part of DAS.

The list caused a lot of confusion - some people thought they only got those 2 attractions for the day and others though those were the only attractions available to use DAS for.
In general, any attraction with a posted wait time is available for DAS selection on your day of park visit. Some may not be available to book yourself in the app, but you can talk to a CM at the attraction.
As was already posted, for attractions using Virtual Queue, guests using DAS will need to either purchase Individual Lightning Lane or need to obtain a Virtual Queue spot just the same as other guests. After their Boarding Group is called, they can talk to CMs at the attraction, show DAS and get an entry to to Lightning Lane entrance.
The outdoor character meet and greets do not have DAS available, but the CM character attendant may have some ability to offer alternatives. This includes indoor characters that don't have Lightning Lane available
 
After approval for DAS, the DAS tile usually doesn't appear until you have entered the first park of your trip. Once the tile is active, you will be able to see and select a DAS Return Time from the My Disney Experience app, one attraction at a time.
The information posted here is specific to the WDW app. The Disneyland app is similar.
There are 3 ways to see attractions that can be selected thru the app:
  • Tap on the DAS tile - this shows a list of ALL attractions that can be booked for DAS IN THE APP, NOT sorted by park, so it can be confusing to look at
  • On the Tip Board - on the Home Page, choose MY DAY, then TIP BOARD. This list can be filtered to choose the park you want to look at (see first screenshot). My daughter's DAS expired, so the screenshot no longer shows DAS Return Times.
  • The map shows the current posted wait times for attractions, tap on the time for the attraction you are interested in and you will see a DAS Return Time choice button. In my experience, the app sometimes doesn't populate wait times on the app. Try refreshing or restarting the app. (See second screenshot)
  • When you tap on an attraction, you can choose the current DAS Return Time listed on the app ( see screenshot 3)
Keep in mind that these will only show attractions with a currently posted wait time. So, there may be nothing listed early in the day. If an attraction is temporarily closed, it will also no have a posted wait time. Try back later, if it reopens, it will be available again.

As long as there is a standby queue you can get a DAS return time, so you can get a DAS for rides such as SDMT or Flight of Passage or Rise of the Resistence. The fact it is an Individual Lightning Lane instead of Genie+ does not matter. Tron and Guardians (and Tiana’s when it opens) are different because there is no standby queue at this point for those rides.

In general, you can get a DAS pass for any ride for which you would be able to enter the queue, but note that you will not be given a return time past park closing, so if the park closes in an hour, you cannot get a DAS return if the wait is 90 minutes. You either have to wait in the standby queue or choose a DAS option that is still available.
