So, on MDE, the LTT's menu shows all sorts of choices for lunch, but only one choice for dinner. We'd like to eat dinner there, but want the lunch choices. Is there a mix up on MDE, or is this how it really is? Thanks in advance!

No mix up. Lunch is a la carte and you can choose. Dinner is a buffet with Thanksgiving type foods; you get all you want to eat, but you don't get to choose. If you want the lunch choices, make the latest lunch ADR you can.
I would go for lunch. We had dinner there a few months back for the very first time and it fell well below our expectations - found the food to be mediocre at best.
It is not a buffet. It is a table meal served family style. There is a difference.

Regarding the food, many people are not happy that they swapped the roast beef for pot roast and the pork roast for ham. To me the changes are indistinguishable and I found our meal there this year to be just as satisfying as in years past. This isn't a venue for haute cuisine. This is food produced in quantity for hundreds of diners - turkey, ham and pot roast are hard to screw up and if you like those proteins, then you will enjoy it.
Technically .............. it could be called a buffet with many definitions "a meal consisting of several dishes from which guests serve themselves" and "a meal laid out on a table or side board so that guests may serve themselves" and "a meal where people serve themselves food that is arranged on a table" .............
I think @sharonabe was making the point you serve yourself and you can eat as much as you want - as opposed to lunch which is standard menu, order what you want and get no more.
Because the menu is so limited they bring the serving bowls to your table as opposed to making you get up and go to another table.
TO OP:
We enjoy lunch there more than dinner for the food and price. I would only eat dinner there again if I were using the DDP.
