Leftover Turkey Recipes

The turkey pot pie sounds promising! Also there was a recipe serve at school which was the only thing my mom would get, called Turkey and Gravy.

It was turkey mixed with a gravy, and served over potatoes. I don't have the recipe, but it was small chunks in a gravy sauce! Might have to make that!

Thought this might be a good time to share our favorite recipes. Here's mine:

"Turkey" Pot Pie (I just substitute turkey for chicken):

our tried and true is pretty much a combo of the two-we call it 'turkey pot pie soup'.

started out with me making a huge pot of what I intended to freeze into containers of turkey pot pie filling. dh and dd kept coming in to 'sample' it until I realized a good portion of it was already gone. I gave up, added some cream and turned it into a soup.

first thing dh asked when he saw me schlepping in 2 turkeys (on sale today:thumbsup2:thumbsup2) was 'does this mean turkey pot pie soup next week':):)

we also do a casserole (sounds gross, but tastes great). simple layering of all the stuff from thanksgiving dinner-turkey, mashed potatos, green bean casserole, sweet potato/pecan casserole, gravy-topped with stuffing. bake in the oven to warm through.

I make a nice thick turkey pot pie soup. I make a ton. Most I freeze in lunch size portions for my dad and I. The rest I make a "pot pie" with no bottom crust and use leftover stuffing as the topping.

its kind of like a turkey and gravy dish...we serve it over white rice

it's not really a recipe

but I cut up a couple of stalks of celery, a quarter onion, a quarter bell pepper and saute them in some turkey broth, chicken broth. when they are soft, I will add a couple of cans of cream of mushroom, some chopped up leftover turkey and some milk or broth to think it out. I add S&P to taste and serve it over white rice. I think I look fwd to this leftover more than the actual turkey!! Lol

Cheesy broccoli rice casserole with turkey added.

YES! Never thought of that! But I'm thinking of the one with broccoli, mushroom soup? (can't remember), cheddar cheese, maybe other stuff and then you crumble ritze crackers on top!

I still haven't really liked the turkey sandwich thing my dad loves so much. Maybe I'm thinking sourdough, turkey, cheese? what kind?, and a spread of cranberry and grill it like a grilled cheese? I think I need to go to google :) lol
