Least busy park on Memorial Day weekend

We're starting a weeks vacation at WDW on Sunday (May 25th). Being that this is Memorial Day weekend and there will be huge crowds at all the parks, can anyone recommend which parks will be the least busy on Sunday and Monday?

• Magic Kingdom
• Epcot Center
• Disney's Animal Kingdom
• Disney's Hollywood Studios

Perhaps my question is the same as which of the parks are able to handle large crowds the best?

Also, since we'll be there for 7 days, is there a recommended order to seeing the parks and which ones should we plan on spending 2 days at.
