Late Breakfast buffet ADR at the wave question

hi, I would like to try the breakfast buffet at the wave. WDW website says buffet served until 11:45. If we have an 11:15 or 11:30 seating, do we risk them clearing out the food shortly after we sit? Or do they keep it out and freshly stocked past 11:45? Just wondering if anyone's had a late breakfast time there.

1) Lunch hours start at Noon.
2) The breakfast items start to disappear just before that time.

3) When we strop for a brief bite at Noon, we see no breakfast items out.
