Loaded baked potato salad is a cold potato salad. Instead of a mayo base you use a sour cream base. And you put in everything that you would on a loaded baked potato. Oh, it is so good! I'll get the recipe for you!

I have no potatos

so I guess i will make it on Monday after i go to the store

Here's the recipe.

Loaded Baked Potato Salad
Yield: 2 quarts

4 pounds Idaho potatoes, peeled
1 pound bacon, crisply cooked, and chopped into 1/2-inch pieces (fat reserved, if desired)
4 ounces unsalted butter, softened
1/2 cup chopped green onions
2 cups grated or shredded cheddar cheese
1 1/2 cups sour cream (regular or low-fat)
1 tablespoon black pepper
1 teaspoon salt

Cook whole potatoes in boiling, unsalted water until tender. Refrigerate until chilled, then chop into one-inch pieces.

Transfer the potatoes to a large bowl along with the remaining ingredients and thoroughly combine. Add some of the reserved bacon fat if desired.

Chill at least 2 hours before serving. Adjust the seasoning prior to serving.

Note: Any condiments or toppings typically added to a loaded baked potato may be used for this recipe.

I don't peel the potatoes and I use margerine instead of butter.

Well anyone who read about the horrible day i had at work the other day I have a bit of an Update

apparently the girl had a DWI a while back and never payed the fine so had a bench warrent out for her arrest
so they caught her that night

no idea of the outcome but she was at work today

and do youthink she even said sorry or hey thanks for covering or anything

NOPE

some people just make me wanna Scream...................................

I love the stuff! We have it where I work but it's $3.99 a pound. (And a pound isn't a lot...potatoes are heavy :rotfl: ) I finally decided it was too expensive and found the recipe for it on my own. It's just as good, or better than what we have at work!

I can't stand people like that! There's always at least one everywhere you work, isn't there?

HI all!!!! :wave2: I'm soooooo glad to be home!!! Thank you everyone for all the thoughts and prayers!! We just made it home and after I checked out the house I logged on the computer!!! We made it home in about 4 hours which was really good b/c it took us about 22 to get to Austin (which is normally a 3 hour drive!!!) Just wanted to THANK everyone from the bottom of my heart for all the prayers, they really worked!!

Is there alot of damage done from Rita around you at all

I haven't had the news on today so i don't know what it ended up like
 
The only real damage I have seen is to the billboards, not much more then that
