2-15 or 16 ounce cans of artichoke hearts, drained and chopped
1/2 cup butter
2 tablespoons cream cheese
1 pint heavy cream
1 teaspoon garlic powder
2/3 cup grated parmesan cheese (preferably fresh)
>In saucepan, melt butter.
>When butter is melted add cream cheese (I increases the cream cheese to 4 tablespoons to make it richer)
>When the cream cheese is softened at heavy cream
>Season with garlic powder (I increased the garlic powder to 3 teaspoons - we like garlic)
>Simmer for 15-20 minutes over low heat, stirring constantly
>Remove from heat and stir in Parmesan cheese (I increased the cheese to 1 cup)
>Stir in spinach and artichokes and stir until well mixed and completely heated.
Serve with tortilla chips and ENJOY!
