Yields: 6 servings

"This is great shredded beef served on tortillas or over rice. Add sour cream, cheese, and fresh cilantro on the side."
INGREDIENTS:
1 tablespoon vegetable oil
2 pounds beef flank steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil

1 tablespoon white vinegar

DIRECTIONS:
1. Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
2. Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

DS looks like he may be starting a cold...This morning I left my home early to stop at the store to pick up puppy food and in the meantime DS woke up a little slugish...so DH caled me and didn't want me to come home, so instead I told him to take DS to the babysitter. HE LOVES OUR SITTER and DH said he "looked" better as soon as DH told him where he was going :rolleyes: Then, DH left DD there too since he knew she would rather go there than school :eek:. Oh well, at least my DH helps out. So, now, after work I need to go to the ATM and get some $ for the sitter, pick up kids and then stop at the store for milk...at least I have turkey and gravy thawing in my fidge for dinner.... :teeth: add some stuffing and I am set. :cool1:
 
I forgot to add that our guinea pig, King Triton, also went to the sitter. Which is good, poor little guy doesn't get much attention from the kids with all the puppies (but I still love him :love: )...our sitter really likes the little piggie and so does her great-granddaughter...so Triton probable got more attention today than he knows what to do with :lmao: When DH dropped everyone off he said that my DD was already carring the poor little guy all around :rotfl2:

Lyn your poor kids seem like they are always getting sick!! I'm like that too! I feel like I'm getting a cold too. I hate it! I don't want to be sick this weekend, just in case :rotfl:

uggghhh!!!! it does seem that way.... We have been doing really great for this past month, but at my DSIL's house, the boys and her DH sleep without shirts...so DH thinks that my DS might have done the same thing and got a cold :confused3 ....DS isn't really "sick" yet, but we don't want him to get sick...sometimes, kids (and adults :rolleyes1 ) don't know how to rest....hopefully he will be 100% tonight :goodvibes I think the other thing is that we are more "sensitive" about our kids being sick and of course I talk about it a lot here. Some people send there kids to school really sick :confused3 and since they are young and it is o.k. for them to miss school I usually just keep them home at the start of something. I couldn't believe that on the last round of the stomach bug some parents sent their kids to school with those nasty symptoms. :confused3
