made Canadian Cheese soup from the Le Cellier recipe, because the Pregnant Queen wanted some. Unlike ice cream, which is a mile down the road, this request would have been tough to meet were it not for the recipe.

If you've never tried it, it works! Amy ate half a gallon. Now she's burried in tums....

WHat an awesome DH you are!!!! I have made the soup too, and I am no good at cooking just ask anyone who has eaten my cooking :rolleyes:

I'll have to dig out the recipe. I've never made it, but I love buying it during the FWF at Epcot. Yummy!

Oh please, don't dig it up, allow me!

Fry a pound of apple bacon. Chop it before you cook it

Add ten tablespoons of butter

Cook down 1 length of leeks, two medium red onions, and three stalks celery (all finely chopped). Don't let them start to caramelize

Add 1 ½ cups of flour, cook it about two minutes, DON'T let it brown or the soup will get "nutty."

Add 1 quart chicken stock. Stirring, cook about three minutes.

Add 5 cups warm milk. On high heat and stirring like a madman, thicken it (but not too thick or it tastes starchy)

Add 1 pound grated, white sharp cheddar (I use Vermont)

Seasons with salt, pepper, and a splash of tabasco and Worcestershire

Add about half a can of Canadian beer (they say Molsen, I say Lebatt Blue)

When reheating, DON'T boil!

Makes one gallon.
 
Sounds delicious. My boyfriend is a much better cook than I am. I'll have to show him this. :D Hope Amy enjoyed it. :D
 
OH MY GOD--that sounds fantastic. Thanks for the recipe, but I see that it does not fit into my Atkins diet.

Maybe I could just melt some Vt. cheddar over some apple bacon and call it a day.

That soup sounds great. Don't worry cause after she has that baby you'll be able to make it again and I just know she'll enjoy it much more then.
