Last minute trip...how to plan

So we usually plan our Disney trip many months in advance. This time is just one short week away. We realized that we could do two nights in Disney while in FL and we jumped on it. We should arrive around 3pm on Sat and we are departing on Monday morning. So how would you plan the rest of Sat and all of Sun. I can't figure out how to strategize these two days (really a day and half!). I have dining reservations at LTT on Sat and Chef d'France on Sun. I could cancel either one so I am not too worried. We are traveling with our 8 year old twins on our 5th trip to Disney. I was trying to get away without a park hopper but I might have to splurge for it. Is HS Star Wars complete? Is it worth the time? Even though we are staying at an Epcot resort, it isn;t our favorite. How would you organize the day and half? Thank you!
 
Star Wars is barely started as far as I know.
 
There is a very good Star Wars area in DHS called the Launch Bay (where Animation Film/area used to be). Lots of things to look at, meet and greets, and a small film. You may want to check it out. (The actual Star Wars stuff that's being planned hasn't reached the groundbreaking stage yet).
 
I personally would skip the table service, they just take a lot of time and you don't have that much.

How much have you gone in the past? I think for boys, HS on sat with the star wars fireworks, launch bay and scattered other things they probably like opened. MK on sunday?

I would say do this, cut out the table service;
-Sat head straight to DHS, hit up Launch Bay, use some fp's *(make them in advance if you can, try to get things you want!), maybe a ride on Star Tours, GMR, TSM, etc.
-Stay for Star Wars fireworks/Fantasmic

Sunday
-Magic Kingdom all day
-Plan fp in advance
-Rope drop, stay all day until fireworks and end of the night parade, utilizing as much as you can

The OTHER option would be to splurge for the park hoppers and REALLY take advantage of those extra magic hours if you're staying at a Disney resort!
-Arrive Saturday
-Hit up DHS for FP & Launch Bay, potentially stay for fireworks/Fantasmic
-Park hop to wherever has pm emh, and stay til close
Sunday:
-Do AM emh, whereever that may be, do as much as you can in that first few hours, hop to Magic & spend the rest of the day there
-Finish off the night wherever's open latest
 
I agree with Accident, skip the table service. I don't think your 8 year old boys would appreciate Chef de France. The only exception would be Be Our Guest. It's a great place for kids and adults (beer and wine in the Magic Kingdom, yes please!). Last minute reservations are usually available.

The park hopper question is tough. You will arrive around 3. After check in and transportation, you won't be at a park until 4:30. That is too late to park hop. However, park hopping on your second day would be ideal.

When staying at an Epcot resort, we like to walk to Epcot in the morning. Then, take the Monorail to Magic Kingdom after lunch (take bus home). Or you can do the opposite. Start at MK, Monorail to Epcot for dinner, then walk home. Either case, make your fast pass reservations for MK (7DMT especially).

On your first day, I would consider MK and not Hollywood Studios. Since you are arriving later in the day, you might want a park that is open late.
