Last minute planning advice needed

We will be there on Sun. Jan. 16-Jan. 20th. Which parks do think will be the most crowded on Sun. and Mon.? most uncrowded?

It seems Spectro is only on Mon. We have seen twice but is one of our favorites. We really want to use the EMH the day we go to MK but that is on Wed.
We are thinking of doing MGM on Mon. and either watching Fantasmic or hopping over to see Spectro.
What do you guys think is best?

Magic Kingdom is ALWAYS the most crowded park, any given day of the week. If you start very early you can get most of the major attractions finished before the crowds hustle in (around 11 or 12). My feeling is that Monday will be a little more crowded because of the MLK holiday (drawing locals especially tweens & teens since many of their parents don't have the day off and they drop 'em off at the park).

Park hopping is always an option we have taken advantage of when MK has been too crowded. Typically we found that EPCOT was manageable, often dead, when MK was overrun (except that fastpasses for test Track had already run out for the day). I suspect MGM will be crowded too, but possibly confined to the rock n roller coaster/tower of terror area.

A little planning and you will be just fine. If you choose to park hop, get back to MK early for a good spot. Maybe some of the locals will have gone home.
