Last min accommodations?

My family travels to Disney via car, so sometimes we'll stay a couple extra days. We have 5 nights at the poly in late October through early November. But when our 5 nights at poly are done, what are my family's chances on getting a room for 2-3 nights at like an All Star or at Pop like really last minute?

We got 4 nights at All-Star Music a couple of weeks ago and we booked on the morning of our arrival in Orlando. We got a great room in the Jazz section, which is close to the amenities and buses etc. Couldn’t have been happier with the resort or the price.

Trust me when I say our next Disney visit will be planned a lot more than this, but this was our first time and we only stopped off because we had a few days to spare on our way to Key West and Miami

I think Jersey week 2018 begins on November 3. The schools are closed and many people from New Jersey head to Disney that week, increasing crowds. Is it possible to get a reservation that you can cancel at the last minute so you don't have to worry?
