Last ADR before Magical Express

First time using Magical Express, my flight leaves at 5:30 PM what would be the latest ADR you would get at Disney Springs in order to get back to Pop in time for ME?
 
Working back, you will be picked up around three hours before, which would be around 2:30. Give yourself an 60-90 minutes to get back from Disney springs, plus 15-30 minutes to get your things from bell services, and get ready for the bus. Plus 60-90 minutes for your meal. I’d probably do 11:30 to be on the safe side,
 
I'd go with noon. Figure an hour for lunch. 90 minutes should be enough time to get back to POP, get whatever is checked with bell services and catch your DME bus. You could wind up waiting 30-40 minutes for a bus.

An alternative. Take an Uber from DS to MCO. Leave DS 3-3:30.
 

For a 5:30 flight your assigned DME pickup will be around 2:30. I'd say 2 PM to be safe because they do pick up earlier than 3 hours out, plus your letter will tell you to be there before the scheduled pickup, plus I like a buffer. Give yourself a few extra minutes to pick up luggage from Bell Services if you'll need to do that.

Leaving Disney Springs, figure 90 minutes or so to get back to Pop (unless you plan on using rideshare). The bus from Disney Springs isn't as frequent as the park-to-resort bus, you could wait a while for a bus to pick you up there. That puts you as leaving lunch by 12:30. Depending on the restaurant, figure 60-90 minutes to eat. I wouldn't book the ADR to start after 11/ 11:30 to be safe.

Rideshare back to Pop buys you some time, but whatever you plan on, plan to be back at Pop by around 2 pm.
 
11:30 would be my vote as well. DME will pick you up 3 hours prior to your flight, +/- 15 minutes. They expect you to be at the DME stop ready to go 15 minutes prior to your pick up time. You'll want to give yourself 10 minutes to get any stored carry on bags from bell services. I agree that an hour is a reasonable amount of time to get back to Pop using a Disney bus, especially during the day when buses from Disney Springs seem to be less frequent. And you don't want to be rushing through your meal, either.

As PP mentions, you could take an Uber directly to MCO and skip DME. Or you could take an Uber from Disney Springs back to Pop, which would cut out waiting for the Disney bus and save you maybe 30 minutes or so.
 
Don't forget to give your checked bags to RMA and have baggage services hold your carry ons at your resort in the morning before heading out.
