Unfortunately, no. You cannot split up your existing contract.

Since it's all or none, remember that large contracts aren't as easy to sell as the smaller ones, so if you go to sell it might take longer with a bigger contract.

And because you can't split a contract, smaller contracts are more expensive per point than larger contracts in the resale market.

I have often said that if Disney offered a service to split contracts for $5pp then that would be a great service.

I also think any CM that sells any single contract with over 500points is doing their clients a disservice as they really should recommend breaking it into smaller chunks.

I agree with the second part of your comment. Good CMs should split it up.

We were able to purchase 600 points (BLT Dec UY) as one resale transaction from the same seller. They were purchased originally from DVC by the seller as three different 200 point contracts. So we do have the option to sell off some points later or give some to our kids.

But they can be considerably cheaper to buy if the home resort and points truly fit your needs. Buying small to get multiple contracts will cost considerably more but there is a happy medium. I remember a 1000 VB contract that sat around forever.
