Labor Day Week Crowds

We will be heading down to Siesta Key, FL next week for the Labor Day holiday/week. Since it would only be a 2 hour ride, I'm debating an impromptu whirlwind One-Day WDW Park Hopper trip. I know it would be a really long day, but as our group is all adults, I think we are OK. What are the crowds like the week of Labor Day? I'm thinking like Tues-Thurs (9/3-9/5)? I would expect with everyone freshly back to school, crowds would be pretty low, correct? Thanks!

We've gone Labor Day a couple of times now and crowd levels were always fairly low. However, with Stars Wars: Galaxy's Edge opening in 2 days (in addition to Food & Wine starting and MNSSHP already started for the year), no one is quite sure what the crowd levels will look like.
