Kids Macaroni & Cheese at Raglan Road

My son had the Mac & Cheese at Raglan Road during our last trip - and it was delicious! He's requesting I make it "just like that" - so here I am googling for a recipe that even comes close. I figured it might be a good idea to ask here if anyone has a similar recipe or has seen it listed anywhere on a copycat board.

I know it has Dubliner Cheese in it, but that's about all I know. Any help is greatly appreciated!!

Raglan Road Orlando - Kids Mac n Cheese Recipe

Cheese Sauce

3 oz Butter
1 each Shallot, chopped
1 cup White wine
3 cups Heavy Cream
3 cups Dubliner cheese, shredded
1 tsp salt and pepper mix



• Melt the butter in a pot, sweat the shallots (do not brown)
• Deglaze with wine, cook for 4 minutes until wine reduces by ½
• Add in the cream and salt and pepper mix, bring to a boil, reduce to a simmer and cook for about 10 minutes
• Using the immersion blender add in the cheese in 3 to 4 batches while beurre mixing to emulsify to a smooth consistency; there should be no lumps

Macaroni Pasta

1 lb Macaroni Pasta
3 qt Water
1tsp Salt, kosher

• Bring the water and salt to a rolling boil
• Add in the pasta cook for about 8 to 10 minutes until desired doneness
• Quickly and carefully strain the pasta of all the water

Add the pasta to the sauce and stir well to coat
Serve immediately
