Just 'wing' it and no ADR's?

We are going to Disney the week before Thanksgiving. WE went the same week last year and found the crowds to be very low. We had ADR's for every night and used some; others we cancelled and had no problem going somewhere else.

This time, we have ADR's for all our character meals, Coral Reef and Le Cellier. Since some of our character meals are for breakfast, that leaves 5 nights with no dinner reservations. We are thinking of just winging it and using counter meals or just eating wherever we are for dinner.

Since we didn't have trouble doing this last year, we are thinking it would be ok. Anybody else going that week or know if that would work? Or should we just make them to have them and then cancel if we change our mind?
 
Over Labor Day weekend we chose to wing it and had no problems getting good food. We got a late lunch/early dinner at SciFi by walking up earlier in the day. We also scored a Biergarten 5:30 pm ressie at 1:00 on the same day. Be flexible with your times and your desires and you should be fine!
 
Depends....we have been to WDW four times in the past 12 months. (crazy year even for us!) Sept/DVC cruise, Dec. 4 adults, Feb. 2 adults, and June 11 kids and adults, and each time the DDP seemed to be progressively more popular, meaning that if you like eating between 4pm-9:30 pm you may want to make a few ADRs. I really recommend this with kids. As noted above if you are really flexible, it probably will be fine, but as for us (4 adults in Dec. again) we booked all of our Dinner ressies in advance. Even then 1 meal was scheduled as a late lunch due to the fact when we called to book Candlelight Processional all of the late bookings w/ dinner before were sold out. Definately the DDP was a factor along with a change that all meals would book before the show.

If you went in Nov. last year, the dining plan had just been rolled out, and may not have been as popular, I would think there would more people using it this year. I would make the ressies just in case.
