Sorry to be late getting back to you'all.
At the moment, the construction on the other side of Sunset Savannah consists of holes, construction workers, and some equipment. No real structures yet and the construction itself wasn't too disruptive.
There are artist renderings posted at the Animal Kingdom Lodge bus stop and, when completed, it looks like the new structures will be lovely and work very well with the existing lodge. Also, the usual viewing overlooks of Arusha and Uzima show plenty of animals so don't let the word "construction" scare you off. I was able to get some giraffe pictures just fine without any construction showing.
My main concern was to alert fellow animal lovers who may be accustomed to more variety of wildlife on Sunset like I am and who like to spend time on the balcony watching them. If you are a more casual observer of the animals, you should be fine and won't notice the construction too much for now. As the structures start going up, that may change but we'll have to keep each other posted on the progress. Also, I didn't notice any bad noise from the equipment so that shouldn't be a problem.
A cast member told me that, once completed, Sunset will probably have at least three new animal species. It does look like they are widening the savannah so that it will lie between the original Lodge and the DVC structure.
