I do NOT have to enter AK to eat here, correct? Definitely will dine here because of a gift card that I've earned (and no Landry's restaurant where I live). I'm just trying to figure out if I have to plan it for an AK park day, or if we can go here on a different day.

There is an entrance before the gates to AK so you can get to it without going into the park.

You do have to go through bag check/security but you don't have to enter the park

There is also a RFC at Disney Springs if that is more convenient and the T Rex restaurant at the Springs is also Landry's if you want to try something different.

100% this ^^ I didn't mention it because the op was asking about eating without entering AK. Yak &Yeti is a must do for us every trip!
