Just booked for July- BF in Iraq and planning by myself I NEED HELP!

Hello to anyone who reads this! I am 22 years old and am going to Disney July 19,2009. My boyfriend, who I will refer to as BF, is currently serving in Iraq as a member in the National Guard. So, we are going on our disney trip in celebration of his homecoming! I know I have 9 months of planning but I have to do this all alone and need some help! :confused3
We are staying 5 nights at the Poly and have 6 day park hopper passes and have the deluxe dining plan.
Please join me in this planning process and help me along the way! :)
 
Since I have to make ADR's in 3 months I've been trying to decide which places we should eat at. Currently I send my BF a detailed description in an email of a restaurant with pictures and a menu, to see if its someplace he is interested in eating. Here is a list of places I am considering. Any feedback is really appreciated!

Me- recenty college grad/currently working at a school. I've been to disney 7 times with my family so this is my first time planning and arranging EVERYTHING my myself. I've only stayed at Port Orleans in the past. We've always gone to the Poly for lunch and to take the monorail to MK. Staying at the Poly has always been a dream of mine!

My boyfriend- Jon- I've been with Jon for over 5 years! Like isaid earlier, he is in the national guard and is in Iraq until June. ( He's been gone since May 08) He has never been to disney so has no idea what to expect. He thinks im insane for wanting to plan out everything before we arrive but I try to explain that when you go to Disney you pretty much have to!

I only get to talk to him on the computer for less than an hour everyday. We mostly communicate via email which gets tough sometimes.
I basically decided to go to Disney because it gives us both something to lookforward to and plan together.
