Jello Sugar-Free Fat-free pudding??????

I know I have read that Atkins people can have this but do you use heavy cream or half and half?And what is the carb count??

It depends on the person. I use 3/4 whole Lactaid milk, 1/4 heavy cream. It's still a little too thick and I have to use the beaters to make it smooth, but it works. Because I need extra protein I divide it into 6 servings, and when I am ready to eat it I add some low carb protein powder to the pudding. Then it becomes a meal. But for Atkins, the ultimate carb total with whole milk or with half and half isn't bad.
 
I use s.f. vanilla instant pudding, + 1 pt. + 1 Cup heavy whipping cream....beat it senseless until it is just thicker than cool whip. Make s.f. jello according to speed-set directions. Orange or lemon are yummy. Once they are combined, remove ice. Add jello to the whipped topping mixture. Blend til fluffy. Pour into a dish and fridge. My DH says if I don't keep it in the house, great pain will come into my life......lol! Carb count isn't much...definately a keeper!!:p
 
It just occured to me. Can we Atkins types use soy milk? Not really sure I've ever seen that addressed.
 
Sugar-free Jello pudding is not a great low-carb choice... the pudding mix itself has 7-8 carbs per serving, and is full of starch.

Use heavy cream, and you add 6.6 carbs for each cup... 2 cups, you've added 13.2 carbs. If you use half & half, you're adding even more carbs. You certainly don't want to use whole milk if you're not in the maintenance phase - full of milk sugars, and about 13 carbs per cup.

Using all heavy cream, if you figure 4 servings in a package, you're up to about 11 carbs per serving. At 8 servings, you're still getting 5-6 carbs, for not much punch.

You'd be better off making peanut butter pudding, mousse or ice cream to satisfy a sweet tooth.

As far as soy milk... if you can find one that is unsweetened, or sweetened with Splenda, you could probably use it... just watch for any added sugars, and count the carbs.
 
Thanks everyone. I may just have to save this for a time when I really need chocolate. I was hoping that every now and then this would be ok instead of the low carb candy bars.
 
I have made the SF jello pudding and frozen it into the tupperware freezing pops things.
