January Help

I would appreciate any feedback on when to add on to our planned trip. We are going to WDW January 2 through 10. We want to stay two extra nights and DH and I can't agree on whether to go the 31st or stay two extra days at the end. I know it is packed on New Years Eve, but that way the kids wouldn't have to miss school. Any thoughts on NYE at MK? Other parks?
