Jaleo with allergies

Is Jaleo allergy friendly that anyone can speak to from experience?
My wife has a salt intolerance and most restaurants at Disney are very accommodating. I’m just wondering about Jaleo as I know there are a lot of sauces and things that might be pre made
They have fish on the menu I’m sure they can always grill fresh just wondering if anyone has any experience there

Hard to know specifically but I have allergies to seafood, sunflower, and spinach and I've never had a problem there in making sure that I'm accommodated but you'd definitely need to indicate in advance when you book and then check when you get there. It's entirely possible that some sauces might already be made that day but not everything has sauces. There's lots that I think are made fresh.
