jalapeno peppers...

What do you do with them? I usually put them on nachos but we have a lot of peppers from our garden and I'm getting tired of nachos...

Any ideas?

Jalapeno poppers!!!

Halve the jalapenos lengthwise and de-seed them. Fill each half with cream cheese. Top with a bit of cheese. Wrap with 1/2 slice of bacon. Bake in the oven till the bacon is crisp and cheese is all melty.

We mix the cream cheese and the cheddar together. This is our go-to app. So yummy!
 
Well, we all thought of the same thing, Poppers!
 

I was just coming to post the same recipe, great minds think alike!
 
Simmer 3 fresh tomatoes and 2 jalapenos in a tiny bit of water. In another small skillet saute onion and fresh garlic. When jalapenos and tomatoes are soft and skins have started to split, transfer both pans to a blender or food preocessor. Puree to desired consistency. Transfer back to sauce pan. Add salt to taste. Heat until bubbly for a delicious warm salsa.
 
I dice them up and then saute them with vegetables. Tonight, I'll cut corn off the cob, add onions and diced jalapeno and red bell pepper and saute with a bit of salt, pepper, garlic powder, and just a smidge of brown sugar. I also do the same thing with fresh, blanched green beans.

Well, I chop them up and mix them in my eggs with some green onions, tomatoes and bacon with a sprinkle of cheese. I also do pico de gallo and jalapeno popper things. I saute them with some butter and garlic and put them either in my chili beans (I buy the canned but I like a little more of a kick) or on a burger. I slice them longways and put cream cheese and bacon and then bake the jalapenos. I also make steak sandwiches and put some with the meat and then cover it in thin provolone, serving it with french bread. I also remember that my MIL makes a jalapeno sauce and cooks chicken in it.
 
On the popper theme, a friend puts small shrimp in the pepper, wrapped w/bacon and grills them (has one of those racks you can get at Bass Pro Shop).

I make salsa, but I also have found a variety of recipes for marinades w/peppers, as well as I'll take 1 or 2 per lb of hamburger, dice them up, and mix them in for a different flavor in burgers. Given the ratio, it's not too spicy.
 
We make our poppers different.

We cut the cap off and de-seed and de-vain them

Filled them with cream cheese, or a mix of cream cheese and crumbled bacon.

wrap pre-cooked bacon around the outside, secure with a toothpick

We put ours on the grill. Grill them for 3-4 minutes each side.

They usually have to be resting upward against something, so all the cream cheese dosen't melt out the top.

An alternative is to slice them down the middle of one side, but not all the way though, to make it more like a pepper pocket, rather than 2 halfs. de-seed and de-vain them.

Fill with cream cheese/bacon, then wrap with bacon and grill only on one side at a lower heat for about 5 minutes.
 
8 oz package cream cheese, 8 oz. chedder shredded, one tablespoon garlic, one package hidden valley ranch dry mix. Mix together. Cut peppers in half (lengthwise) remove seeds and pith. Fill with mixture. Top with quarter slice of cooked bacon. Grill with top open so cheese does not bubble over, Enjoy. This is one of the things we are having today at our cookout. L&G's Dad.

Chutneys, salsas, hot jellys and jams, pickled jalapenos.

In quesadillas, chiles, stews, burritos, enchiladas, tacos, fajitas, etc.,

In brownies, double chocolate cookies...

In salads (corn, beet, jalapeno, lettuces, spicy vinagarette, etc., etc.) ....

They're jalapenos! Anything! :)

My absolute favorite way to eat them

Deseed and devein them

Put them in a large bowl and drizzle with GOOD!!!! Extra virgin olive oil and kosher salt.

Have your grill on high

In a grill basket, grill the pepper until slightly charred

eat.

This is heavens little heat snack. And it is DELICIOUS

You can also used these grilled gems for salsa, in tacos and burritos, eggs, anything that calls for a jalapeno.

Hot stuff with chocolate is awesome, you might also be interested in lightly chili-spiked hot chocolate (real hot chocolate not the Swiss Miss packety stuff, it's too weak and not really chocolatey) and chocolate covered hot pepper strips ... :thumbsup2
