Please give feedback on my itinerary and dining plans! My 180 day mark is not all that far away!

Background - this will be our 5th trip, 2 adults, 2 kids (7 and 9). We will be at CSR, coming in on a Friday morning (very early) and leaving the following Thursday dinnertime flight. After 4 times on the DDP, we've decided to skip it this time, as some of the places we would like to try are on the lower cost side and sometimes we would prefer to get an appetizer and share an entree. We will not have hoppers, and will probably not go back to the room for mid-day breaks. I've not planned a HS day. We've been once for a half day and it just doesn't seem like there's much there. I figured I would rather make our MK days less rushed to get everything in and just leave out HS. I think the fireworks at MK will be too late for us, but we'll probably see them one night at Epcot.

Friday - into MK by late morning, lunch at Pinnochio Village Haus, leave by late afternoon, dinner @ Las Ventanas
Saturday - MK rope drop, lunch at LTT, not sure on dinner - not sure if we'll be back at the resort for pool time or still be in the park
Sunday - AK, Tusker House lunch, Pepper's Market dinner
Monday - Epcot, Liberty Inn lunch (not our favorite but has things the kids will eat), San Angel Inn dinner
Tues - MK, CHH lunch, Maya Grill dinner
Wed - Epcot, Rose & crown lunch, Via Napoli dinner
Thurs - MK - BoG lunch then depart for airport

AK SHOULD have their night time stuff up and running by the time you go, so you may want to fit that in.

I wouldn't make that Maya Grill ADR just in case you DO want to stay for fireworks at MK. If anything, I'd plan for a break that day just to be able to see them, but we LOVE Wishes and fireworks in general.

Are you using Magical Express for airport transportation? If so, don't forget they will pick you up at CSR 3 hours before your flight, and you need to be there about 3 1/2 hrs before. The bus will be pulling away from the curb at the 3 hr mark, and if you aren't on it, you have to get to the airport on your own.

As for HS, if you're Star Wars fans at all, you may want to add it back in for the Spectacular. You could do that on your arrival day since it's not a full day anyway.
 
I would definitely try to fit in Wishes. Maybe on Tuesday and then sleep in the next day and hit Epcot a bit late.

Also DHS is almost my kids fave park (after MK for DD). It may be DS16 favorite. They love ToT, RnRC and TSM. ToT is DD10 favorite ride and she's ridden it since she was 5. Maybe do DHS on arrival day. That'll still give you 2 1/2 days at MK.
