ISO layered chicken/stuffing casserole recipe!

i used to have a recipe that called for chopped chicken, pepperidge farm stuffing (i think) and a couple of other things, maybe a cream soup. it was put together in layers and baked in the oven.

alas, that piece of paper is long gone-does anyone have a recipe that resembles this?

thanks for any help!!!
 
Hi Lisa...yes that is an oldie but goodie recipe, but I think this is it...we just called it "chicken casserole". Remember, this recipe is from the early 80s, and is written as such.


Chicken Casserole

2 large chicken breasts (cooked)
1/2 pint sour cream
1 can cream of mushroom soup
cheddar cheese (shredded or small chunks)
1 package Pepperide Farm Poultry Stuffing Mix


Simmer chicken in slightly salted water until done...Save the broth, one to two cups needed. Put skinned pieces of chicken in a casserole and season to taste. Cover chicken with cheddar cheese. Mix sour cream and soup together, and pour over chicken and cheese. Moisten (quite wet) the stuffing mix with the broth. Cover the casserole with the moistened stuffing. Bake at 350 degrees for 35-40 minutes until top is brown and sauce is bubbly.

I think that this would work well in the crockpot. I haven't made it in a very long while, and think I will make it again this week (in the crockpot). Hope this is what you are looking for....Stay cool!

I don't know where my recipe is right now, but is very similar to the one posted. Only diiference is mine did not call for chesse (but it sounds good) and with mine you put the dry dressing over the chiken layer, dot w/butter and then pour the broth over the top
 
Well, I have a recipe similar recipe, but it calls for raw chicken breasts. We have a real unique name for it.....hehe


Chicken with Cheese

4 raw boneless skinless chicken breasts (halves)
1 can condensed cream of chicken soup
4 slices swiss cheese
1 1/2 cup milk
2 cups pepperidge farm stuffing
1/2 stick butter

Grease 8 x 8 pan (Pam Spray)
Line with chicken, cover with cheese
Mix milk and soup and then pour over chicken
Melt butter, mix with stuffing and put over all.

Bake 350F for 1 1/2 hours until thinkest part of chicken cooked.
 
I too have a similar recipe, but it does not use cheese or sour cream.

I don't have it handy, but basically you take your chicken and boil it off the bone (well, now we have boneless/skinless chicken that you can use) but you save the broth.

You use 1 can of cream of celery soup and one can of cream of chicken.

Use one cup of chicken broth and the two cans of soup. Mix together.

Melt a stick of butter and mix it into the stuffing bread crumbs.

layer the pulled chicken, pour over some soup mix, put a layer of the bread crumbs, chicken, soup breadcrumbs. Then bake at 350° for about an hour and it's done. Simple and good. You can add in some veggies like peas if you like, but I prefer the regular chicken/soup/topping chicken caserole.

Sorry I didn't have the exact recipe. I do it by memory now.
