On check out day I want to take ME to MCO and have my bags taken at SSR (jetblue kiosk). We will be flying out at 6AM the next AM and will be staying at the Hyatt located inside MCO. So basically will they take you a day before your flight?

No. The airlines won't allow them to do this.

You can take ME back to the airport the day before, but you have to either schedule it explicitly, or come up with a flight number on the day you want to go back that leaves about the right time.

You cannot check your bags a day early, though. You'll have to take them with you, and check them in that morning.
