Is there much Fastpass availability difference at 25 days vs 30 days?

I am an offsite guest. I am planning to buy APs but wanted to wait until next week, however, my Fastpass booking window of 30 days starts tomorrow. Since onsite guests have already booked at 60 days, will there be much difference between 25 and 30 days for availability if I wait?

No there's really no difference. It's not until about 7-14 days out that you really start to see FP's gone
