Even if a company kept covid stats, not sure it would mean anything. Disney employes still go home after work, shop or go out in public and interact with others. It isn't like their employes live there 24/7 isolated from the rest of the world. Since the OP's profile says PA, I assume you will have drive/fly to get to Disney and will interact with people at airports, hotels, rest stops, etc. It isn't like you will somehow teleport your family from PA to Orlando.
Covid isn't over and even if you have been vaccinated, it still makes sense to follow the same precautions recommended since last year when this first started. Only you can decide what your family should do at this time. One year into covid some states seems to be in a race to reopen. I have yet to see where being in denial, optimistic rhetoric or denying reality has made covid any less serious of a disease.
