Is there any place that shows "activity sheet" for resorts?

I know Disney activity schedules vary, but just looking for some past examples @ HHI, BWV and OKW

Check the resort FAQs on the Resort board - sometimes they are posted there. I doubt you would find anything for HHI though - I don't think HHI is discussed anywhere but on the DVC boards.
