You might want to check out the DISabilities board which has some discussions on gluten free dining (although I don't recall much in the way of pictures).
The nice thing about WDW is that most of the buffets have a good selection of naturally GF foods, and on occasion you can get the chef to make a GF substitution such as a gluten-free roll on a hamburger, or whatever. I had a great BBQ eggs benedict at the Whispering Canyon Creek where they substituted a GF english muffin - it was great. And they did make GF Mickey waffles for me at Tusker House (which looked the same as the "regular" one, although I thought the taste was a bit dry).
