IS there a such thing as 1 or 2 day hopper

NO, either buy a longer hopper and keep the extra days, buy a hopper with 1 or 2 days left (I suggest a friend and not E-Bay) or a convention ticket (which are not generally available to the general public)

There is such a thing, but they're not available to the general public - either convention-goers or cast members. The CM passes regularly show up on ebay, but you'll pay a premium for them. My advice if you can swing it is to buy the shortest hopper available (currently 4 day I think) and save the extra days for another trip. They won't ever expire. Bonus: having those extra days already paid for is a great excuse to plan another quickie trip!

We bought a 3 day Park Hopper Plus pass through the Disney Preferred Ticket Office, whatever that is. I found the number on Mousesavers.com. It's part of the Alamo car rental deal, but you don't have to actually rent a car from Alamo to get the 3 day pass. It saved our family lots of money.
