to call housekeeping?? We probably won't be able to check in until after 8pm. If I need more towels or pillows is it ok to call that late? Will someone be there??

You shouldn't have any problem calling - if you're that worried about it, call the resort before you check in.

It has also been my experience that extra towels are always available at the Front Desk of the resorts,which are staffed 24 hours a day.

Its certainly OK to call housekeeping at any time. There are people who's job it is to respond to guest requests no matter what time of the day.
