We've had dinner at PF several times over the past few years (before the remodel) and have felt it was one of the best buffets at WDW. (Boma being the other) That being said I don't know how it is since the change.
We didn't eat there in Sept. since it was closed, but one interesting fact was on our last day, my DD8 and I were traveling around on the monorail after having breakfast at 'Ohana and we noticed that PF was open! I asked the CM there and she said that the had just opened that day (Sept. 16th) earlier than they expected. She told me about the steps being added and the mice being retired.
I was sad to hear about the mice since DD really enjoyed them and they came around many times (unlike Cindy and Prince who only visit once) but now it sounds like the steps have made it even better.
As far as it being crowded, what we have found at every buffet at WDW is that if we schedule our times for off-times, we basically have the place to ourselves. Several times we have had dinner at PF at 8:30 p.m. (we like to eat late, and being from CA the time difference makes this not too late). I've been pleased to notice that even if you are one of the last in the place, they do keep refilling the food. We've also done this successfully for breakast as our new tradition has been to have a late breakfast, character meal, on our last day-which is a day we don't go to the parks. We've done PF at 10:30 for breakfast and this has worked really well! There were only 2 families left in the room by the time we were done, and all the characters stayed out. My DD8 had a great visit with all the breakfast characters out in the lobby and had a great time playing with Alice and the Mad Hatter. Last Sept. we ate at 'Ohana at 11:00 a.m. and it also worked well. The room was mostly empty be the end of the meal and the characters came around 2-3 times each. Very fun!
