Hi All-

It's that time again, International Night is coming up this week at DD's elementary school. Previously we've done Hummus, Tzaziki and Moroccan Beef and Fruit Stew with Couscous...I'm debating over what to make this year. Does anyone have a tried and true recipe for Tiramisu or Ropa Vieja? Or any other suggestions for a great international recipe? All of the basics like enchiladas, spaghettie, and sauerkraut get covered, and I like to bring something different!

Thanks

Chapati (African bread)
African Chicken Stew

My friend from Jamaica made this really awesome thing...it was whte rice and beans (kidney)...not your typical beans/rice, she cooked it with coconut milk... (cooked the rice with coconut milk/instead of water), and then added the kidney beans..

It was sweet and delicious...

There was no real name for it... she called it for her husband Nicolai (he's Jamaican).. Nicholai's Beans and Rice.

Another Filipino dish is fried egg on top of rice... eggs/rice common breakfast.

Indian food... you can do chicken curry, or brinjal eggplants, or anything like that.

My friend from Trinidad made some wonderful native dish with cabbage, carrots and spices.

Make a pot (crockpot maybe) of homemade Chai... indian recipe.. my DH makes this and its delicious.

I have many international friends and family.. so this is fun for me as well.

Last time DD had to have something for an international food event we made a pot of Irish potato soup. We took it in a crockpot and brought along foam cups and spoons for eating it. It was a different approach than the "plate" foods.

Also my GS Troop is getting ready for an International Dinner for Thinking Day. They are going with a combination of French foods and Middle Eastern foods. The French favorite was Chocolate Mousse :p and the Middle Eastern selection that met with the most enthusiasm was Curried Fruit.

Thanks everyone for the recipes and ideas. They all sound great, and I may pass them along to the lady in charge of International Night. I know they are always looking for new ideas. We did the Moroccan Lamb (used beef instead) and Fruit Stew and did it in the crock pot last year and served it in small cups as well. You are right it was a nice alternative to plate dishes. I decided on Creme Brulee, because I found out this interesting bit of information while searching through my cookbooks:

"Creme Brulee sounds as if it should be a French dish, when, actually, it's British. The name, however, is French and translates as burnt cream. The creamy custard topped with burnt sugar was a specialty of Trinity College in Cambridge, where it was called Cambridge Cream in the early 18th Century."

I thought that would be a fun bit of trivia to include on our table display.

I have made Swedish Meatballs in the crockpot for DD at school. It was a big hit with the kids.

I just posted the recipe for Canadian Cheddar Cheese Soup from Le Cellier. That would be easy to keep warm and transport in a crockpot. Please note this recipe does not contain beer.
