Input on ADRs for December Trip (DxDDP)

So everyone, I've agonized for a few weeks (okay, months ) about making the ADRs for our December trip and my 90 day mark is finally approaching. On Sunday, I will be up before the crack of dawn with the best of em' to try to secure all of my desired reservations.

Opinions on restaurants, alternate suggestions and thoughts on times, etc. would be greatly appreciated. When I ask everyone in my party for opinions, their response is "Eh, I don't really care. Do what you'd like" Sounds good, right? Not when you have like 12 reservations to make!!

Green will mean it's a new restaurant for all of us and red means at least one of us have been there before. There are three of us (all adults) traveling to WDW.

Saturday: (no dining ADRs) Arrival in WDW, Epcot & DTD
Sunshine Seasons for lunch
Earl of Sandwich for dinner

Sunday: Disney's Hollywood Studios
Hollywood Brown Derby for lunch @ 11:30am
Flying Fish Cafe for dinner @ 5:30pm (DM has never been)
Sci-Fi Dine In Theater for milkshakes @ 9:30pm (DH has never been)

Monday: Magic Kingdom
Crystal Palace for breakfast @ 8:15am (DH has never been)
Kona Cafe for dinner @ 5:00pm

Tuesday: Magic Kingdom
The Plaza Restaurant for lunch @ 1:00pm
California Grill for lunch @ 7:30pm

Wednesday: Animal Kingdom
ESPN Club for lunch during mid-day break (DM has never been)
Jiko for dinner @ 8:00pm

Thursday: Epcot
San Angel Inn for lunch @ 12:00pm (DM has never been)
Tokyo Dining for dinner @ 8:30pm

Friday: Magic Kingdom & Departure from WDW
The Plaza Restaurant @ 1:00pm

These choices are great! I would say that on Wednesday, I would suggest the ESPN Club or Wolfgang Puck Cafe or Kouzzina's as well. The green choices are all GREAT. I would say that with the free dining, I would try to get the options that you most want, but be prepared to be OK with your backups. Just relax and try to reserve what you think would taste best. There is a GREAT review that was posted last week (starting on the 30th of August-September 7th).
