Info about activities before booking window opens?

I've heard we don't see bookable activities until the day we book them. Prepping for our first Disney cruise and wondering if we will have time to think about activities or is it like 6am on dining reservation day, where a fraction of a second can mean you miss out on a reservation you want? Is there a list of options somewhere that gives an idea of what kind of activities there are for a given ship/port? Just trying to plan ahead so I will be ready when booking window opens.
 
If you go to DCL’s homepage, you can see that types of port adventures that will be available. They may not all be available on your particular cruise because of time in port or seasonal differences.

Most port adventures will likely be available when you are able to book. A couple though that will almost certainly not be available. One is if you want a cabana at one of DCL's private islands. Also some excursions, such as the helicopter tours in Alaska, also tend to sell out pretty quickly.

You might look at joining your cruise group on Facebook. There may very well be people who can book before you and will let you know what is still available.
 
Port adventures are listed online. The activities on board are spa activities, Bibbidi Bobbidi Boutique, Pirates League makeovers, upgraded dining, and various drink tastings. The drink tastings for my 7 night cruise were practically unavailable when the silver window opened.

Spa treatments for adults

Bibbidi Bobbidi Boutique for kids 3-12

Small World Nursery for kids 3 and under

Adult dining at Palo (all ships), Remy (Dream and Fantasy), Enchante (Wish and Treasure) — dinner served each night, brunch served on sea days, maybe Palo Prima Notte on first night and Remy Dessert reception on sea days

Some dining and beverage tastings may fill up before you can book, but you can keep checking online and ask onboard if there’s something you really want,
