We are a family of 6, 2 adults, 3 kids and one infant. When I make dinner reservations do I include the infant? Also does this make us a party of 6? Will we automatically be charged the gratuity even if the baby does not eat?

Yes, you are a party of 6. It does not matter if the baby will not eat. They are still a body that has to be accounted for.
 
And yes, you will be charged the automatic gratuity, as you are still a party of six. The party size doesn't have anything to do with who eats.

Even if you leave the baby off when you make the reservation, when you get there you will be listed as a party of 6.
 
Yes, you have to count the baby but you don't pay for them when they're under 3 - I didn't realize that and had to go back and modify all of our reservations
 

Restaurant party sizes are not the same as "who pays" - when you make a restaurant reservation you must include everyone in the party, regardless of their age, whether you will be paying to buy a meal for them or not. I do see a lot of confusion from parents who think they don't have to include infants in a restaurant reservation because the infant won't be eating. For fire code purposes they need to track the number of people who can fit in the restaurant, and that doesn't have anything to do with who will be eating or not eating.
