Not taking the time to read all of the replies. so sorry if this is repeated......
since you didn't mention a fridge or coffeemaker I will assume you have neither. However, if you are open to using a cooler and replacing the ice daily, it does open up the possibilities a bit more.
whole grain bagels and peanut butter.... good for breakfast, lunch, and/or snacks.
nuts or trail mix.... calorie dense, but yummy and fairly filling.
individual tuna salad/chicken salad " lunch kits".
single serving (shelf stable) hummus and crackers or pretzels or pita chips.
fruit.... apples, oranges, bananas, pears, kiwi can all sit out of refrigeration for a week without difficulty.
canned soups.... fairly healthy (depending on what you buy), filling, and can be warmed in a microwave.
instant oatmeal, grits, cream of wheat (I know you said you don't care much of instant, but in a pinch they work).
homemade muffins, bagels, snack bars that don't require refrigeration.
single-serve individual "cups" of _____________________ (fill in the blank... I've never eaten Easy Mac, so I can't comment, but I also know that there are healthier "cup" options out there).
chips and salsa
microwave popcorn (makes a great evening snack!)
If you could use a cooler that would open you up to......
hardboiled eggs, cheeses (great for snacking, sandwiches, with crackers and fruit for a meal), hummus (other than the single serve shelf-stable type), yogurt, other fruits (grapes, berries, cut melon), carrot and celery sticks.
Don't forget the paper napkins, paper plates/bowls, paper cups, disposable cutlery, salt/pepper/sugar. I am the local QUEEN of traveling on the cheap, so I've done this before for my family many times.... it takes some work, but it is worth it! Several years ago we spent a week in DC with the kids (road trip)... regular hotel room, no kitchen, no fridge. I brought along a cooler full of fridge foods and a backpack full of dry goods and paper supplies. Our hotel supplied breakfast, we had a few lunches out at the museums (Subway most days) and ate dinner from our cooler/bag nearly every night. Saved us a good bit of money plus it was nice to RELAX in the hotel room after a tiring day of touring! When we visit Disney we ALWAYS bring breakfast foods for the room.... and when the kids were younger we stayed at an all-suites hotel off site and had dinner in the room most nights as well (flying in, shipped a box ahead plus brought food in the luggage).
