I love pecan pie but can't seem to find any good recipes...PLEASE share yours! :teeth: Thanks

My husband's aunt made the best pecan pie. I think one time she said it came from the Karo Syrup bottle. Here is the recipe:

Pecan Pie

3 eggs beaten
1 cup sugar
1 cup Karo light or dark syrup
2 tablespoons melted butter or margarine
1 teaspoon vanilla
1¼ cup broken pecan pieces
1 9 inch unbaked or frozen deep dish pie crust

Preheat oven to 350 degrees. In a large bowl stir eggs, sugar, corn syrup, butter and vanilla until well blended. Stir in pecans. Pour into pie crust. Bake 50-55 minutes or until knife inserted halfway between center and edge comes out clean. Cool on wire rack.

I looked up the recipe from the Roselyn Cookbook and it is basically the same as the one previously posted.....so, it must be good. You can't beat the old recipes! (Insert pie smilie here)

I agree, my mom has always made the one from the karo syrup bottle, but it has to be dark syrup, not light. It's soooooooo good. Of course, it's the same one I make. I think her mom made the same recipe as well. I've never had pecan pie as good as that. I hate the ones made with light syrup. They just aren't teh same.

Actually we usually mix some of each - dark & light.

I've never tried it that way. But I don't like it with light. I'm sure everyones tastes are different too. But it's dark all the way for our family! Oh and the chewier the better. ONe year, I didn't press the the refrigerated pie crust together good enough, and some of the filling got underneath it. It was a nightmare to get out of the pan, but man was it good. I think it was the best ever. After that, my mom actually started poking small holes in the shell to make it more chewy :rotfl:

Last Thanksgiving I made pecan pies with the new Karo syrup. It is brown sugar flavor and it was wonderful in this pie!

This is my DH and my Dad's favorite pie so I have made and ate one to many. My Mom always made the recipe similar to the one posted but last year I decided to jazz it up and I used Paula Deen's Bourbon Pecan Pie. It was delicious also added Bourbon to my sweet potatos at Thanksgiving ---so yummy!! Goodness knows I need all the liquor I can get when surrounded by family. Here it is I think you will love the rich flavor--
Bourbon Pecan Pie
1C sugar
3T butter melted
1/2c dark corn syrup
3 Lg Eggs beaten
1 1/2 to 2C Pecans
2T good quality bourbon (I just used Jim Beam)

Stir together sugar and melted butter. Add corn syrup, eggs, pecans & bourbon stir until combined.Pour mixture into unbaked pie shell. Place on heavy duty cookie sheet. Bake for 10 min at 375. Lower temp to 350 and bake for 35 to 40 min.

Here is one that I make.

1/2 cup evaporated milk
1 teasp. vanilla

Directions:

Preheat Oven to 375 deg. F.

In a medium mixing bowl, blend together cream cheese, 1/3 cup sugar and 1 teasp. vanilla. When mixture is smooth, spread into bottom of pastry shell. Sprinkle cream chese layer with chopped peacans.

In anotehr medium mixing bowl. combine eggs, 1/4 cup sugar, corn syrup, evaporated milk, and 1 teasp. vanilla extract. Whisk until mixture is smooth. Pour mixture over pecan layer.

Bake in preheated oven for 35 to 40 minutes until set in center.

NOTE - I use a deep dish crust - It makes a lot of batter.
