In getting package, why only get one day ticket

I have been reading about people booking a package, it seems always with dining but not sure, and only getting a one day ticket with the package. I understand it is cheaper but then if you buy a ticket on your own, at least for me, it cost more. For example, we are going not this January but next January. That is value season so I priced a package in December during value season just so I could get a good idea on the cost. We will be going for 7 nights with dining package. We will get park hoppers for 8 days cause we will be going to the parks 1st and last day. It cost about $100 more if I booked the package with only one day ticket and then bought a 7 day park hopper versus if I just bought the package with an 8 day park hopper. I guess some people may not be able to go the first and last day so they would not need 8 days but really it is not that much more for the extra days. Am I missing something?
 
People who have tickets from previous trips or that bought discount tickets will buy a 1-day ticket to get the dining plan. Unless you have an AP (or DVC, I think), you have to buy the dining plan as part of a package that includes resort and tickets.

Also, I believe even AP holders have to buy at least a 1-day ticket to get the free dining plan during that promotion.
