In Anaheim 8/16-8/23, when should we plan a day away from the parks?

So, the recent crowd reports/photos are making me extremely worried about the crowd levels at the parks for our upcoming trip. We will be there a full week, and are staying on site, but wanted to plan a day at Sea World and a morning/afternoon at the beach (can do the parks in the evening on beach day). So, I know no one really knows what the crowds will be like, and the Expo and AP unblocking may throw a huge wrench in everything, but if you were going to be there Tue 8/16-Tue 8/23, when would you expect the biggest crowds? Which day would you plan on being a non-park day and which day would you pick for an evening-only day?

We can take advantage of MM, but we normally aren't early morning people. We may be able to swing it easiest in the beginning, because the time change will work in our favor, but a few late nights will have us sleeping in a bit by the end of the trip.

I'd appreciate any input/suggestions on this as I'm struggling to make our plans. Thanks!!!

Sunday Aug 21 would likely have the largest crowds with Monday Aug 22 being second.
