In a dining rut?

Have you tried Polite Pig? Great BBQ and great bourbon selection.
And just to completely upend the whole process, what about HDDR? The food is just edible. But the show is epic.
I like good food. But, we have good food at home. I like some of the signature dining at WDW, but I am more impressed with some of the theming. I know you said no burgers, but just as an example, I much prefer Sci-Fi to California Grill. We just don't have places like that around here.

We have gone to WDW for years. Initially with the kids, then just the 2 of us and now with our son and dil. Each trip we have a few restaurants that we always do, but then always add 1-3 new restaurants per trip. It helps keep things fresh. Our last trip, we added Bourbon Steak house (expensive and loud) and La Hacienda (amazing food - put into the must do again list).

Jaleo.
Morimoto.
Bourbon steak.
I'm assuming you know what Teppan Edo is?
It just seems different from your other choices.
I have similar tastes and thought TE was awful!

I add a vote for Jiko and while you already have two at Grand Floridian Citrico's has become a must do for use every trip. Wailulu is another good option.

Hi all!
Been going to WDW for 40 years, consider myself to be a pretty informed Disney-goer.
But I think I'm stuck in a dining rut!
We have our faves, but are looking to mix it up a bit.
What places are your faves and why?

(So far we have booked: Narcoosee's, Flying Fish, Victoria & Alberts (it's a big B-day trip!), Boathouse, Boma, Teppan Edo, Frontera Cocina, Yak & Yet (lunch), Chefs de France (lunch)...

We like fine dining and we don't have kids.
What am I missing out on?

Thanks in advance for sharing your faves!

(edited to add: no burgers)
(one more edit: no breakfasts - haha!)
Jiko is excellent and if you aren’t adverse to buffets we found Boma to be very good as well. Their seafood stew is really good, We don’t like buffets but relented on trying it since others in our party wanted to go but the quality was good enough that I would go back.
