but a quick ? - how do you know which encounter you do? shallow versus 10 feet?? Do you choose when you get there?

The 10 feet one is the standard, but they also ask if anybody in the group is uncomfortable in deep water. This is usually done just before you step in the lagoon. If anybody got issues with deep water, they are offered the shallow water encounter.
