Illuminations at Epcot has changed...

Maybe you lucky, lucky people who get to go to WDW a lot are just getting a tad jaded?

I don't go a lot, but I think you hit upon something with the jaded comment. I've probably seen Illuminations a dozen times over the years and the most recent viewing definitely was underwhelming. It was about 3 years since the previous viewing and it was always spectacular in the past. This most recent time, however, ho-hum. Been there, done that, I suppose.

Same feeling with the Main Street Electrical Parade.

Lucky for me, there's still plenty of exciting things.
