Grilled Pound Cake
~Makes 4 servings~
2 Cups strawberries, halved or quartered
1/4 Cup sugar
1 Egg, lightly beaten
2 Tbsp milk
2 Tbsp orange liqueur, (such as Cointreau or Grand Marnier)
4 Slices pound cake, cut approx. 1/2 -1" thick
* Needs to be a good, dense, pound cake, or it might crumble.
Entemanns pound cake works well, if it's available in your area.
Whipped Cream for garnish (optional).
Combine berries and sugar in a metal pie plate (or bowl). Let stand at room temperature to allow juices to form. Stir occasionally.
Grease bbq grill well, and preheat on high for a few minutes.
Place pie plate with strawberry mixture on one side of the grill to warm. Stir occasionally.
Beat egg, milk, and liqueur in a small shallow dish. Dip each slice of pound cake into egg mixture, turning to coat both sides thoroughly. Using egg lifter, place dipped slices on the grill. Turn after 3 or 4 minutes, or when nicely browned; brown other side.
Place each slice of cake on a dessert plate and spoon heated berries on top. Garnish if desired with whipped cream (go for it!!
). Serve immediately.
*When we had this, a few splashes of liqueur were also added to the berry sauce, just to bump up the flavour!
