I would definitely go for a characer meal. My son (8 yo) will tell you that Garden Grill is his absolute favourite character meal. He also enjoys Crystal Palace and Tusker House.

Dinner at Tusker House or pre-park breakfast at Crystal Palace. The only two meals at WDW that are musts every trip. If I had to choose only one it would be TH.

Chef Mickey if it is our one and only. We always end our trip with brunch at Chef Mickey's, touring the resorts on the monorail to do any last minute shopping and taking the DME to the airport.
