If the park extends it hours

Does it extend it's restaurant hours too? I noticed alot of park restaurants say they are open till park close, but I then noticed some hours have been extended on my trip. So I wondered if that ment they would ad seatings as well? Just curious mostly?

I don't know what happens if they extend the hours at the last minute. I know that during EMH p.m. hours the park restaurants take ADRs up until closing (inc. 3 hours for EMH).
