If going in December, when should we reserve parks?

We will be going 2nd week of December.

I understand sooner the better to reserve parks but my son tells me we still have time until December.

My understanding is you cannot reserve parks until you buy park tickets? We didn't buy tickets yet.

How fast does the park days sell out? When is the latest we should be reserving parks?

nothing is sold out yet after April.

Making reservations 2 months in advance has been generally sufficient, but things can always change. So definitely make park reservations as soon as you have tickets.

I'd recommend keeping an eye on the availability calendar, and as soon as you see any park not available in October, it's time to buy!
 
I would suggest making a basic plan of park days and reserving those days shortly before your ADR date (60 days before your trip) so you can make decisions on where to make meal reservations, and know that you’ll have access to the correct park on the correct day.

You can always switch things around later (assuming there’s availability) if plans change, but having something locked in ahead of time means you know you’ll be able to get into all the parks you want.
 
I'm a planner and as soon as we made the decision to go, I bought our tickets and got something reserved for each day. I have edited the park reservations a few times but I didn't see the point in waiting (FYI, our trip is in July, I booked us the end of Jan/beginning of Feb).
 

I was going to wait to see which park has early entries for DW resort guests before deciding on which park.

Now I'm little confused. When we were there few years ago, different parks had early entrance and extra 1 hour late hours for resort guests. And these used to change alot before our trip.

When I looked at calendar, I don't see which parks are available for early entrance so I guess my question is, are ALL the parks open 30 minutes early for resort guests every day?

Yes, all parks open 30 minutes early for resort guests. They actually let resort guests in even earlier and sometimes some rides start before the 30 minute early entry.
